A note about my pregnancy!

Court here. The past few months have been truly amazing. I am overjoyed that the Lord has blessed us with a baby growing quickly inside my belly. It is such an amazing experience that I hope every woman (who wants to) can experience some day!

It has been such a relief and joy to tell family and friends our exciting news. We kept it quiet for 13 weeks, which was really tough for me.

Here is how we told my Mom and Ron the news, we sent them this picture. For those of you who do not know, they have a special relationship with Shiloh (on the left) because she is their dog Chloe's baby. My mom pretty much raised Shiloh for the first 12 weeks! 
So this picture seemed appropriate. 


Now that the news is out, I get random texts from family and friends, like this from my dad. I love it! Thanks dad, we will need to remember this. 


Here is our little baby at 12 weeks 1 day. We love him/her already!

Oh and I cried at my first ultrasound. It was an amazing experience and weird. So weird. It's happening.

Right now I am 15 weeks and the baby is the size of a large naval orange. Wow! Its crazy that there is something growing inside of me, the size of an orange and I cannot feel it. Pants have just begun to feel a little snug around the waist, but most everything still fits. I am excited to have a cute belly to show off, but until then I just have this little pudge. But it's a cute pudge.

So how has my pregnancy been so far?
Overall I would say pretty good. I am sooooo thankful that I have not had much morning sickness. There were a few weeks (weeks 8-11) where food sounded gross and I was nauseous in the evening, but nothing terrible.

I continue to workout and do even more yoga now, which has been helpful with some back pain. I'm trying to eat healthy, but vegetables just hardly ever sound good. But I eat them anyway, because I know how good they are for me and baby. Plus, we are starting to harvest lots of veggies from our garden (that will be another post soon).

I'm tired and I love my sleep. I'm just trying to get as much in as possible before December arrives.

Cravings so far include sour gummy candy -- great for you, right?

Nick has been amazing and supportive. He is always looking out for me, making sure I am resting and he taking care of things around the house I cannot do (like poison the weeds -- I hate weeds). I love when he rubs my belly and prays over the baby.

A bit overwhelming. 
This past week I started looking at nursery furniture, strollers, monitors, etc. And WOW! It is overwhelming. There is so much stuff out there and the prices vary soooooo much. I wonder if the more expensive car seat is safer or is it just some fancy brand that drives the price up?!?!?  There is so much to figure out, but I know that I have tons of friends with kiddos who have already gone through this process, so that is reassuring.

Lastly, our little Shiloh is no longer going to be the baby in the family. Here is a picture of her with Nick. Shiloh was convinced that there was a tennis ball sitting on top of a speaker so Nick had to lift her up to prove there was nothing there. It was quite comical.

Vegetable Garden Part II

I should have posted this a few weeks ago, but life has been really busy for Nick and I the past month and a half! The garden is doing great. Tomatos are starting to turn red...woohoo!

Having a garden is amazing! Everyone should do it or at least try.  And you can really do quite a bit with just a little bit of space. There are so many resources out there to help guide you.

About two months ago I transplanted everything into the garden bed that Nick built. It was both good and bad. We learned that you cannot buy tomato plants and not transplant them three weeks later, you need to do it within a week--oops. Quite a few of the pods where we started seeds did not transplant well...at all...they died. I don't know if I did something wrong or it was the weather, who knows. For some things like green beans and zucchini only a few if the transplants lasted, so i had to plant more. Carrots, zucchini and green pepper did not work at all, so I ended up planting seeds directly in to the ground for those. For some reason the green peppers never grew and I bought a starter plant last weekend. We also bought sweet potato slips and planted those last weekend. The lettuce and spinach were growing great and I got a few cuts off them, but the squash plant has kind of over taken their area, so they are not growing well anymore. 

So far we have had 1 good size zucchini, a bunch of green beans, lettuce and spinach. Soon we will have lots more zucchini and tomatoes!  The green beans continue to grow and I check them periodically to see which ones are large enough to harvest. 

It's exciting to see the results from our hard work!

Nick has been putting mulch on the plants that are bigger and this seems to be helping and keeps the plants moist between watering. Unfortunately we have pesky little bugs trying to eat our plants so we
are using a pesticide, but I want to look into some natural pesticides that will work. There is also a little birdie that likes our lettuce.


The garden has truly been rewarding. It is amazing to grow your own food, I feel so productive!

We have learned a lot from our gardening experience this year and next year will we plan things out differently and plant a lot more.

Since we are doing to have tons of tomatoes, I am hoping to learn how to can my salsa and can tomatoes. I hope it goes well.

Vegetable Garden -- Part I

Well, I do not know what I am doing when it comes to gardening. I did not do much gardening as a kid, so Nick has taught me a lot. First off, Nick was taught by his dad, who is amazing in the garden. His dad recently showed us how their backyard via Skype and it looks like a little Oasis. We are not going for Oasis at this time, we are growing a vegetable garden. Yep...lots of edibles and I am soooo excited.  

This will be the first of a few posts about our vegetable garden, so I will call this the 'prepping' stage. 

First, we decided to do a raised garden bed. Nick went to Home Depot and bought three 3x8x12 untreated boards. Had them rip one in half to it made a 4’x8’ bed that was 12” high. Took 15 minutes to build the box with decking screws, then he coated in a Thompson water seal. The box was filled with 1 yard of garden mix from a local nursery. Nick filled up the back of his truck and shoveled it into the box. It cost $30 for the boards, $35 for the soil. Not bad!

We bought seeds at home depot and we are planting the following: bell peppers, zucchini, green beans, carrots, onion, lettuce, spinach, basil, cilantro, sweet potatoes and tomatoes all in that 1 garden box!!!!  We split box into  1 foot squares and planted the vegetables by the foot.

So once we figured out what could be planted in the ground and what needed to stay inside until the chance of freeze was gone, we started. Here are our seedlings growing and tomato plants in the garage. 


We also built a gate so that we can get in and out of our garden and so it is protected from little pesky animals, like our dogs and rabbits. 

So Nick built the gate and then I made it pretty. We used our projector upstairs to project the design that I made onto the gate and we traced it with pencil. Then I took it into the garage and started painting. I am pretty happy with the way it turned out. 


The next post will have everything planted and our fence around the garden. I hope we have lots to eat this summer. 

Lastly, I am ending with a picture of Shiloh. She is getting so big, almost 50 pounds. Yikes!!

Catching Up—Our Puppy and Breakfast Ideas!

Wow, it has been over a month since my last post. I have been slacking big time!  There have been a lot of things going on that have led to my business and lack of time to blog. One of the biggest consumers of my time is our new puppy Shiloh! This is Reagans sister, Corynne already blogged about him - here.

Man—having a puppy is a LOT of work! She runs our lives at the moment, but I absolutely love it. She is a crazy little sweetheart and I laugh so much when her and Dixie play together. We were a little worried about getting a 2nd dog (especially a puppy) since Dixie is a little special. She is very skiddish and not very playful, but they are doing great and Dixie is more playful! Having Dixie has actually helped entertain Shiloh, I cannot imagine having a puppy in the house without another dog, she would be chewing on all our furniture. Here are some cute photos, I cannot get enough of my girls.



In other news, Nick and I took a trip to Nashville to celebrate our 5 Year Anniversary. It was a blast and I will write about it soon.

I wanted to share a few healthy breakfast recipes that I have tried recently. I try to avoid eating a lot of baked goods and especially things with a lot of flour, so I found some good breakfast options on Pinterest that satisfy my craving for baked goods. You should try some of these out:
Banana and Oatmeal Muffins (follow the link) - these are great and I have been eating them all week. I also topped them with a little almond butter for breakfast. YUM!

Ingredients:
2.5 cups old fashioned oats
1 cup plain low fat greek yogurt
2 eggs
1/2 cup honey
2 tsp baking powder
1 tsp baking soda
2 TBSP ground flax seed
1 tsp vanilla
2 ripe bananas 
Instructions:
1. Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with silicone or foil liners.
2. Place the oats in the food processor and pulse for about 10 seconds.  Add remaining ingredients to the food processor. 
3. Process until everything is mixed together and oats are smooth.
At this point in the process, you can separate the batter into two different bowls, adding dark chocolate chips to one and walnuts to the other (as desired).  
 4. Divide batter among cupcake liners, and bake for 15-20 minutes, or until toothpick comes out clean.

I also made the Biggest Looser Oatmeal Pancakes. These were awesome too and you can make extra to heat up for on the go breakfast. One morning I cut up apple slices and added some almond butter. 
Biggest Looser Oatmeal Pancakes
Ingredients:
6 egg whites
1 cup rolled oats, dry
1 cup cottage cheese
2 teaspoons sugar
1 teaspoon cinnamon
1 teaspoon vanilla
Instructions:
In a blender, blend all ingredients until smooth. Heat a griddle or large non-stick skillet over medium-low heat. Spray with non-stick cooking spray. For each pancake pour 1/4 cup of batter onto griddle. Flip when they start to bubble. Cook until golden brown. Repeat with remaining batches, spraying the griddle as needed. Makes about 10 pancakes.
Number of Servings: 3
Nutritional Info Per Serving:
181 Calories, 2.7g Fat, 10mg Cholesterol, 361mg Sodium, 20g Carbs, 2.8g Fiber
