As an afternoon snack, I made some fresh whip cream to go with my fruit salad. I absolutely love fruit when it is in season–it makes me happy. For homemade whip cream, you only need three ingredients and it tastes amazing.
Ingredients: 1 cup of heavy whipping cream, 2 tbsp of sugar (I used splenda, since I am not eating sugar right now) and 1 tsp of vanilla.
Beat all ingredients in a bowl until whipped, then serve. I put the extra in my fridge and it should last a week or so.
The rest of Sunday Funday involved catfishin' at night. We started heading over to the lake around sunset and wow–the sunset was beautiful! Nick got me all set up with my pole and some night crawlers and within 5 minutes of having a line in the water, I caught a fish. He was not a very large fish, but it was awesome, especially considering it was the only fish we caught all night (little fishy picture below). It was very relaxing sitting and watching the little light-up bobber bounce around on the water. Plus I had some quality time with my hubby and I managed not to break anything. [I can be very clumsy, Nick told me numerous times to watch out for the lantern.]
Needless to say Sunday Funday was a blast!
